Sales Ledger/Food & Beverage Cost Controller

Main Role in conjunction with other duties as defined by the hotel
- Objectives :

•To maximise Revenue through the Sales Ledger by sending out invoices at confirmed rates, ensuring credit policy and debt collection procedures are respected to prevent risk of bad debt
•To control credits, including receipt of payments & Accounts’ reconciliation, following the company guidelines for collection delay
•To ensure accurate recording and processing of all F&B purchasing documentation.
•To ensure all F&B controls are in place.
•To control & Monitor F&B Payroll
•Helping source more cost effective products for F&B

Main responsibilities :

• SALES LEDGER INVOICING
• COLLECTING & MANAGING DEBT
• MANAGEMENT OF THE MARGE BRUT SYSTEM
• LIAISON WITH CENTRAL ACCOUNTING
