Sous Chef

Works alongside head chef to manage the banqueting operation, including overseeing staff, aiding with menu preparation, ensuring food quality and freshness, processing orders and stock rotation., The following are specific responsibilities and contributions critical to the successful performance of the position:

• Eight to ten years experience in a high quality establishment


• Two to three years as a Chef de Partie


OTHER DUTIES

• Performs other related tasks as assigned by management.


• Complies with Dalmahoy Hotel and Country Club policies and procedures.


• Working hours as required to do your job but normally not less than 45 hours per week.
  
  If you have drive, determination and have 3 years kitchen experience in a supervisory role then this could be the ideal role for you!, To ensure that the banqueting kitchen is effectively managed and that the conference and banqueting guest receives a consistently high standard of service.


• To communicate to all staff, Executive Chef and management to ensure that all requirements are understood and delivered


• To co-ordinate and monitor all training within the outlet to ensure the correct understanding of responsibilities and tasks by the team, to enable them to achieve gold standard.


• To plan menus with the use of seasonal produce when available.


• To ensure that all menu specifications are adhered to, in order to control all costs and maintain GP., Sous Chef: 2 years (preferred)
